Who’s down for a lavender gin fizz? If your mum is a cocktail aficionado, we’ve got just the recipe for Mother’s Day! This lilac-hued cocktail looks just as gorgeous as she tastes, with a dreamy, foamed head and aromatic flavour, adorned with dried lemon slides and fragrant lavender buds. All you’ll need is to mix up some lavender syrup, then add it to a cocktail shaker with a little lemon juice, gin, and an egg white—and voila! Your cocktail is served

Ingredients

Lavender Syrup - makes approximately 1 cup

  • 1 cup sugar
  • 1 cup water
  • 5 tbsp dried culinary lavender buds

Cocktail

  • 60 ml gin
  • 30 ml fresh lemon juice
  • 15ml lavender syrup (adjust based on taste)
  • 1 egg white (can be substituted with 2 tablespoons of aquafaba, which is the liquid from canned chickpeas).
  • Ice
  • Lavender buds and lemon slices to garnish
  • 1/2 tsp butterfly pea powder, or 1 drop each of red and blue food colouring (optional)
Method
1
Firstly, you’ll need to create your lavender syrup. Simply combine equal parts of water and sugar, and steep with lavender blossoms in a small saucepan over medium-high heat. Bring to a boil, stirring until sugar dissolves. Reduce heat and simmer for 1 minute. Remove from heat and let syrup steep for about 30 minutes. Strain into a jar and cool. This can be made in advance and kept in the fridge for when cocktail hour is calling.

Now, it’s time to whip up your cocktail! Add gin, lemon juice, lavender syrup, butterfly pea powder or colouring, and an egg white to a cocktail shaker with no ice.
3
Shake vigorously for 30 seconds to create a foamy top. Add ice to the shaker and shake again to chill.
4
Strain into a glass, then garnish with lavender buds and lemon slices.
